Needing Kneading

I knead backs these days…

Not unlike bread, the kneading.

These little at-risk boys and girls

Get back-rubs before they go to sleep

At the Day Care Center.

They need it.

Oatmeal Bread

Oatmeal Bread Recipe
This is a very dense bread! I guarantee if you give this to your children, they will not ask for junk food!

Today’s recipe is Oatmeal Bread. It’s a recipe that Lila made a lot. Back before I was born, Lila won a ton of flour in a twenty-five word or less contest. That’s right, A TON OF FLOUR! That’s 2,000 pounds of flour! I’m sure you’re visualizing a big rig stopping in front of our house and a delivery person fork-lifting several large pallets of flour into our garage. Nah, it’s not that dramatic. She received 80 coupons for twenty five-pound bags of flour. Lila gave some away. And she became a master bread baker. So, you know this is a good recipe.

Oatmeal Bread

Tools You’ll Need:

  • Large bowl
  • Sturdy wooden spoon
  • Measuring cups & spoons
  • Bread pan

Ingredients:

  • 1 package dry yeast
  • ¼ C warm water
  • 1 ¼ C milk, heated
  • 1 T butter, softened
  • 1 ½ t salt
  • 1 C quick oats
  • 3 T brown sugar
  • 2 2/3 C flour

Dissolve the yeast in warm water. Combine milk, butter, salt, oatmeal and sugar. Cool to lukewarm; add yeast/water and blend. Add flour. Knead the bread on a floured surface until smooth, using a smidge more flour as needed.

Let rise and punch down and form into a loaf in bread pan. Let rise until doubled. Bake at 375 degrees 40-45 minutes.

Easier than a bread machine!
